These are ducks that were raised on certified organic feed and allowed to roam the pastures eating whatever their hearts desired to forage. They are a strain of Pekin ducks that were developed in France to satisfy the discerning chefs over there. You will find this type of duck less fatty than a traditional Pekin with a very nice ratio of meat to bone. Although less fatty than traditional Pekins you will still get enough fat to render for some roasted potatoes or veggies - save the duck fat there is nothing better for high heat roasting. A little known fact duck fat has the same healthy properties as olive oil.
