Pasteurized, goat's milk, aged 10 days. St. Brigid has a rich interior that develops pronounced aromas with a supple and melting texture. Traditionally made with goat milk, commercial makers now typically make it with cow milk. Buyers can enjoy it now (young) or allow to age an additional 3 weeks, where it will be gooey and wonderful warmed in the oven. Comes in traditional terra cotta dish for lovely presentation or host/ess gift.
